Bargain Hunters: Fresh & Easy Groceries

I am proud to say that we've been 100% on target with our meal planning this week in my household which is saving us a bundle on food costs. It is working out so well in fact that I could not wait to get started on a meal plan for next week. After doing a little research I discovered that Fresh & Easy publishes their weekly add in the middle of the week! Below are this week's big savings items. Prices are good through March 31st.

Based on these featured items, I've set out a menu for next week that capitalizes on these big savings by searching the key ingredients on various recipe websites. Here are a few of my suggestions:

Roasted Salmon with Chile Minted Cucumbers - Uses $0.98 Cucumbers, can purchase Salmon at Fresh and Easy for $5.99 lb
Artichoke-and-Red Pepper Pizza - Uses $0.98 Red Bell Pepper, Also meatless main dish that saves on protein
Barbecue Chicken and Grape Salad - Uses $1.00 Red Grape, $1.00 Green Grapes
Parmesan Chicken Paillards with Cherry Tomato Sauce - $0.98 Grape Tomatoes
Spicy Cucumber Salad with Peanuts - Uses $0.98 cucumbers
Santa Maria Smoked Tri-Tip - Uses $2.99 lb Tri-Tip

Shopped the sales and got our veggies at the local farmer's market. By omitting what I call "craving purchases" (ooooh, a bag of ruffles wouldn't be so bad) and buying the store-brand items, it was easier than I thought it would be! Meal planning makes all of this so much easier!
