Homemade is Better: Artichoke and Red Pepper Pizza

The chicken salad may not have lived up to its expectations but we definitely hit a couple of winners for our weekly dinner time meal plan which have more than made up for it. The Artichoke and Red Pepper Pizza inspired by the sale on Red Peppers at Fresh and Easy Grocery this week far exceeded any expectations we had. It was the best pizza I have had in a long time (homemade or restaurant quality) and wins extra points by being vegetarian. No protein = Big Savings! This could easily become a weekly rotation for us.

Start by precooking your refrigerated pizza dough. We tried Fresh and Easy's brand and I cannot convey to you how good it was. Plus it was only $1.70! It was way cheaper and way better than a lot of the leading brands.

Next proceed to the toppings phase. The genius to this recipe is that it maximizes flavor by sauteeing veggies first with garlic and herbs as Don demonstrates here:



This recipe skips the sauce but makes up for it by putting cheese both underneath and on top of the veggies. Yum! Put back in the oven long enough to melt the cheese and you end up with this delicious finished product below.


My top chef of a husband also strayed from the recipe a bit to add some extra sliced tomatoes we had leftover in the fridge to the pizza. It was an excellent addition and also a great Cheapskate move to use them up before they went bad! Get the full recipe here on www.myrecipes.com.
