Craving seafood but don't want to spend a lot of money? Watch your grocery flyer for sales on Frozen shrimp. They stay fresh longer in the freezer than fish and other types of seafood so you can stock up when they are on sale without worrying about them going bad. Don and I tried a new recipe tonight which was quite a treat and the best part was it was so simple and easy to make. This recipe gets a huge bonus for only involving less than 10 ingredients - Shrimp, Tomatoes, Parsley, Garlic, Lemon Juice, Feta, Olive Oil, Salt and Pepper. Preheat the overn to 450F. Quarter the tomatoes and toss with olive oil, garlic, salt and pepper. Roast in the oven for about 20 minutes. Then add shrimp, lemon juice, and parsley. Stir together and then sprinkle with Feta cheese. Put back in the oven and bake until shrimp turns pink and cheese is slightly melted, about 10 to 15 minutes. The result is a delicous, flavourful dish. Serve with crusty bread to mop up the juices.
Cost Breakdown was only $10.25 for about 3 servings or about $3.40 per person.

This is what we had tonight too! The only difference is that we used precooked shrimp from Trader Joes. So, when we added the shrimp and cheese we just cooked it long enough to warm the shrimp so as not to overcook it. Turned out DE-lish! We will definitely be making this one again.
